ITS A SNAP CHEESECAKE 
1 envelope Knox unflavored gelatin
1/2 cup sugar
1 cup boiling water
2 (8 oz.) packages cream cheese, softened
1 tsp. vanilla (optional)
9 inch graham cracker crust

In a small bowl, mix unflavored gelatin with sugar. Add boiling water and stir until gelatin completely dissolves, about 5 minutes.

In a large bowl, beat cream cheese and vanilla with mixer until smooth. Slowly beat in gelatin mixture.

Pour into a prepared graham cracker crust.

Chill until firm (about 3 hours). Garnish with fresh or canned fruit, whipped topping or yogurt, if desired.

CM's Note: For a different flavor, use a tablespoon of lemon or lime Jello in place of the same amount of the sugar and omit the vanilla.
