HOBO BREAKFAST 
4 potatoes, boiled & skinned
1 lg. onion, chopped
1 clove garlic, minced
1/3 cube butter
6 eggs
1/2 c. cheddar cheese, shredded
1/2 c. Monterey Jack cheese, shredded
1 c. salsa

Preheat oven to 350 degrees. Grate and fry potatoes, onion and garlic in butter. (I use Ore-Ida potatoes O'Brien instead.) While still warm, press potato mixture into round quiche pan forming a 1/3" thick crust like layer. Beat and scramble eggs until firm, spread over the top of the potato crust. Sprinkle cheese on top of eggs. Bake until cheese has melted, 5 minutes. Serve with salsa.
