EASY LEMON CHEESECAKE 
1 (8 inch) graham cracker pie crust
1 (3 oz.) pkg. lemon instant pudding
2 c. milk
1 (8 oz.) pkg. cream cheese

Mix 1/2 cup milk with cream cheese; blend well. Add package dry pudding mix and remaining 1 1/2 cups milk. Mix with electric mixer on low for approximately 1 minute. Pour into pie shell. (Optional, garnish with sprinkle of graham.) Chill 1 hour or longer. Enjoy.

This is very easy, I did make some lemon jello and then added it.. liked that way better. But great recipe and very simple!
