KARIDOPETA - GREEK WALNUT CAKE 
SYRUP:

3 c. water
2 c. sugar
1/2 tsp. cinnamon
1 slice lemon
1/4 c. rum or 1 tsp. extract

BATTER:

1/2 lb. butter, softened
1 c. sugar
6 eggs
1 c. flour
1 c. farina
1 c. chopped walnuts
1 tsp. cinnamon
2 heaping tsp. baking powder
1 tsp. grated orange peel

Make syrup first by combining ingredients in a saucepan. Boil 10 minutes. Stir every few minutes. Set aside to cool.

Cream butter and sugar until light, add eggs, one at a time, beating constantly. Add flour, farina, baking powder, cinnamon, orange peel and beat well. Then add walnuts. Bake in 9x13 inch buttered pan at 350 for 30 minutes. Pour cooled syrup over cake while cake is hot. Allow to cool, cut into diamond shapes.

This is an awesome cake!! Years ago I worked in a Greek restaurant and the owners made this cake for the help only. It took me years to find the recipe. Love Cooks.com, love this cake. I made it for my brother for his b-day he said it was the best cake he's ever had-he's right!! I didn't add the walnuts though because it wasn't in the original recipe.
