SWEET SOUR PORK 
1 1/2 lb. lean pork shoulder, boneless
2 tbsp. fat
1/4 c. water
1 c. pineapple juice
1 tbsp. soy sauce
3/4 c. green peppers, cut in strips
1/4 c. sliced onions
1 #2 can pineapple chunks
1/4 c. brown sugar
2 tbsp. cornstarch
1/2 tsp. salt
1/3 c. vinegar

Cut pork into strips 2 inches long and 1/2 inch wide. Brown slightly in hot fat. Add water, cover and cook in electric skillet (optional) at 300 degrees for 1 hour. Add pepper strips, onion (drained), pineapple and saute.

Combine brown sugar, cornstarch, salt, vinegar, juice and soy sauce. Mix and cook until slightly thickened, stirring constantly. Simmer for 10 minutes. Serve over cooked rice. Serves 6.
