MEXICAN FUDGE 
1 lb. Velveeta cheese
1 lb. butter
4 lb. powdered sugar
1 c. cocoa
2 c. chopped pecans or nuts of your choice
2 tbsp. vanilla

Melt the cheese and butter in a large microwave-safe bowl until mixed. Watch this and stir frequently. Mix in the powdered sugar, cocoa, pecans and vanilla. Mix this well and pour into a 9 x 13 greased and wax papered pan. Chill.

This is a NO FAIL fudge. If you do not tell anyone they will not know that it is made with cheese. It is really good.

Since microwave ovens vary in power, you may need to adjust your cooking time.
