TAMALE PIE 
9 lbs. hamburger
4 c. chopped onion
4 minced cloves garlic (optional)
2 cans chopped olives
6 (#2 1/2) cans tomatoes
2 tbsp. salt
1/3 c. chili powder
1 1/2 tsp. pepper

Brown first 4 ingredients, then add remaining ingredients. Simmer 5 minutes. Mix 1 1/2 cups cornmeal with 6 cups water; stir into meat mixture. Cover, simmer 10 minutes. Pour into large insert. Top with topping; bake for 40 minutes at 350 degrees in convection oven.

TOPPING:

Heat 9 cups milk with 1 1/2 teaspoon salt and 3/4 cup butter. Slowly stir in 3 cups cornmeal; cook until thick. Remove from heat, and add 6 cups grated cheese and 1 dozen slightly beaten eggs. Approximately 50 servings.
