OATMEAL RAISIN COOKIES | |
1-1/2 cups sifted flour 1/2 tsp baking powder 3/4 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 1/2 tsp ground ginger 1/3 cup sugar 1/3 cup vegetable oil 1/2 cup molasses 2 eggs 1-1/2 cups rolled oats 1 cup raisins In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger and sugar. Add vegetable oil, molasses, eggs and rolled oats. Mix until blended. Stir in raisins. Dough will be soft. Drop batter by heaping teaspoons onto nonstick baking sheet. Bake at 350 for 12 to 15 minutes. Remove from oven and let stand 1 minute. Remove from baking sheet and cool. Yield: 48 cookies. |
