MICROWAVE NUT BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 c. nuts (unsalted peanuts, almonds, etc.)
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Stir together sugar and syrup in a 1 1/2 quart casserole. Microwave at high power for 4 minutes.

Stir in nuts. Microwave at high power for 3 to 5 minutes until light brown.

Add butter and vanilla. Blend well. Microwave on high for 1 to 2 minutes. Nuts will be lightly browned and syrup very hot.

Add baking soda. Gently stir until light and foamy.

Pour mixture onto lightly greased cookie sheet. Finished product should look foamy or porous.

Let cool 1/2 to 1 hour. When cool, break into small pieces (approximately 77). Store in airtight container. Yields 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
