PUMPKIN BREAD 
3 eggs
3 c. sugar
1 c. vegetable oil
1 tbsp. vanilla
2 c. pumpkin
2 c. self rising flour
1 tbsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
1 c. chopped pecans

Beat eggs until they froth. Beat in sugar, oil, and vanilla. Beat until thick and yellow colored. Stir in loosely packed pumpkin, flour, cinnamon, soda, salt, and baking powder. Fold in nuts. Pour mixture into 2 bread (loaf) pans sprayed with Baker's joy. Bake at 350 degrees for 1 hour or until tester comes out clean. Cool 10 minutes in pan. Invert and cool.
