"HIMMELREICH" - ROASTED PORK
WITH DRIED FRUIT
 
2 1/2 lbs. boneless rolled pork
1 tbsp. flour
1 c. dried apricots
1 c. dried apple slices
1 c. pitted prunes
3/4 c. brown sugar
3/4 c. dry white wine
1 plastic oven cooking bag

1. Preheat oven to 325 degrees.

2. Dust inside of oven cooking bag with flour. Arrange pork and dried fruits in the bag. Place the bag in a large shallow roasting pan. (Edges of bag should remain in pan.) Sprinkle in brown sugar and pour in wine. Tie the bag securely. With fork, puncture bag 4 times. Roast 1 1/2 hours (pork temperature 170 degrees).

3. Be careful slitting bag open to avoid escaping steam. Place meat on serving platter and arrange fruit around the roast. Spoon glaze over the meat and fruit to serve. Serves 4. Goes well with red cabbage and noodles.
