ORANGE GLAZED PORK ROAST 
1/2 tsp. salt
1/2 tsp. dried thyme
1/2 tsp. ground ginger
1/2 tsp. ground pepper
5 lb. boneless pork loin, rolled and tied
3 garlic cloves, each sliced into 4 pieces
1 tbsp. flour
2 tbsp. cornstarch
1 c. sugar
1 1/4 c. orange juice
1/2 c. water
1/4 c. lemon juice
2 tbsp. Dijon mustard
1 tbsp. soy sauce

Heat oven to 325 degrees. Combine salt, thyme, ginger, and pepper in small bowl. With a sharp knife, make 12 slits in pork loin. Then insert a slice of garlic and some of spice mix in each slit. Rub rest of the mix on the meat. Insert meat thermometer. Put roast in roasting pan, uncovered, and bake for 3 hours total.

In a saucepan, combine flour, sugar, cornstarch. Add orange juice gradually, then remaining ingredients. Cook over medium heat and whisk for 3 to 5 minutes. After pork has roasted two hours brush frequently with glaze. Roast until meat thermometer shows 170 degrees. Heat glaze and serve as sauce.
