SOUTH CAROLINA CORNBREAD 
1 c. all-purpose flour, sifted
1/4 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. yellow corn meal
2 fresh eggs
1 c. milk
1/4 c. shortening (soft)

Sift first 4 ingredients together; stir in cornmeal. Add eggs, milk and shortening. Beat with rotary or electric beater until smooth, about 1 minute. DO NOT OVERBEAT! Pour into greased 9x9x2 inch pan. Bake at 425 degrees for 20-25 minutes.
