ZUCCHINI BREAD 
4 eggs
1 c. cooked & mashed zucchini
2/3 c. water
1 c. salad oil
3 1/3 c. flour
3 c. sugar
1 1/2 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg

Combine all ingredients and beat with a beater. Put into 3 medium sized greased bread pans. Bake at 350 degrees for about 1 hour. Pumpkin or winter squash can be substituted for zucchini.
