NEW YEAR'S BLACKEYED PEAS 
1 lb. pkg. dried black-eye peas
1 c. chopped onion
1 c. chopped bell pepper
1 (3 oz.) pkg. thinly sliced pepperoni
2 tsp. med. taco sauce

Soak and cook peas according to directions. Cook until tender but firm (not mushy). Add onion, bell pepper, separate slices of pepperoni and add. Stir in taco sauce and simmer an additional hour. Serves many.
