BLACKEYED PEAS - INDIAN STYLE | |
1 c. dried black eyed peas 1 sliced carrot 1 tsp. S & B Sun Bird oriental curry powder (a combo of spices) 1 tsp. honey or waffle syrup 1/4 tsp. turmeric 1/4 tsp. cumin 3 c. water 1 chopped onion 2 tbsp. coconut 1/2 tsp. shredded ginger (keep fresh ginger root in freezer until ready for use) Add all ingredients to boiling water and simmer until liquid is absorbed and peas are tender. Makes 4 servings. |
