CABBAGE CASSEROLES 
2 cans cream of mushroom
1 small cabbage
1 small onion (optional)
1/2 cup mayonaise
1 cup grated cheese
2 sleeves Ritz crackers
1 stick butter

Preheat oven at 350°F.

Cut up cabbage as you would for steaming. Put in a casserole dish.

In a separate bowl, combine cream of mushroom soup, mayonnaise and onion; pour over top of cabbage.

Mix together melted butter, Ritz crackers and cheese. Sprinkle over top of casserole.

Bake for about 30 minutes until bubbly and brown.

Excellent use of cabbage. I added a good few dashes of woozy sauce and used Colby Monterey jack cheese along with corn flake crumbs for topping. Loved how recipe allowed cabbage to remain fairly crisp versus limp. Have also used zucchini and squash along with cabbage to add variety and use up odd and end veggies in fridge. BTW, only had a cream of potato and cream of chicken soup so went with it. Worked great. As another reviewer noted, this recipe lends itself to a multitude of variations! Great base as it is or with sensible additions/adjustments. Thanks for posting!!

I used this recipe as a base for a lo-carb tuna casserole. I followed the instructions here but added a layer of sliced mushrooms, diced carrots, edamame, and tuna before adding the soup which I misked with buttermilk and fresh dill (no mayo). I didn't use the ritz crackers nor the butter. It turned out to be quite tasty.

I didn't have a 2nd can of mushroom soup so I used a can of chicken gravy and added fresh mushrooms...worked out great! With the onions, I sauteed it a little before adding to soup mixture. This is a great recipe that you can play around with. I'm passing it along! Thank you for sharing.
