SICILIAN MEATLOAF 
2 lbs. ground beef
2 eggs, beaten
3/4 c. soft bread crumbs
1/2 tsp. oregano
Garlic to taste
1/2 c. tomato juice
2 tbsp. parsley
1 onion, chopped
Salt & pepper to taste
6 oz. Mozzarella cheese, shredded
1 pkg. sliced pepperoni

Mix all ingredients together. Pat into 12 x 10 inch rectangular foil. Cover with the cheese and the pepperoni. Roll up like jelly roll. Seal the edges and ends. Bake seam side down in a loaf pan. Bake at 350 degrees for 1 1/4 hours.
