VEGETABLE CURRY 
Selection of vegetables: potatoes, cauliflower, carrots, courgettes (zucchini), onions, peppers, green beans, peas, mushrooms
1 tin chopped tomatoes
Curry paste

Fry onions lightly for 2 to 3 minutes. Place vegetables into a pan and bring to a boil. Drain water and place the vegetables, tomatoes, mushrooms and onions in a pan. Add curry paste. Stir well. Simmer gently until vegetables are cooked, stirring occasionally.
