LEMON VELVET CAKE 
1 (2 layer) pkg. lemon cake mix
1 (4 serving) pkg. lemon gelatin
3/4 c. vegetable oil
4 eggs

GLAZE:

2 c. confectioners' sugar
3 tbsp. lemon juice
3 tbsp. water

Mix together lemon cake mix and dry gelatin. Add oil, 3/4 cup water and eggs. Mix at medium speed 3 minutes. Bake in a preheated 350 degree oven for 35 to 45 minutes. While still warm, stick with fork; cover with glaze.

For glaze, mix together confectioners' sugar, lemon juice and 3 tablespoons water. Pour over warm cake. Yield: 9"x13" cake.
