APPLE CRUNCH MUFFINS 
1 to 1 1/2 c. flour
1/2 c. granulated sugar
1 tbsp. baking powder
1 tsp. cinnamon, divided
1/2 tsp. salt
1 egg, slightly beaten
1/2 c. reconstituted nonfat dry milk
1/4 c. oil
1 c. coarsely shredded unpeeled apple
1/3 c. packed brown sugar
1/3 c. chopped walnuts

In medium bowl, mix well flour, granulated sugar, baking powder, 1/2 teaspoon cinnamon and salt. Stir in egg, milk, oil, and apple just until flour mixture is moistened. Spoon into 12 greased muffin cups. Sprinkle with mixture of brown sugar, walnuts and remaining 1/2 teaspoon cinnamon. Bake in preheated 400 degree oven for 25 minutes or until pick inserted in center comes out clean and tops are brown. Cool pan on rack 5 minutes, then unmold. Makes 12. Good spread with butter.
