CORN CASSEROLE 
2 tbsp. butter
2 tbsp. flour
2 slightly beaten eggs
1 can whole kennel corn, drained
1/2 lb. Cheddar cheese, grated
1 c. soft bread crumbs
1 sm. can Ortega chili peppers
1/2 tsp. salt
1 c. milk

Cream butter, flour, and milk. Add salt, egg, corn, and bread crumbs. Put 1/2 mixture in casserole. Place strips of chili peppers over mixture. Cover with grated cheese. Repeat and add buttered bread crumbs on top. Bake in 350 degree oven for 30 minutes.
