COOL GAZPACHO SOUP 
4 c. tomato juice
1/2 c. chopped unpeeled tomato
1/4 c. finely chopped green pepper
1/4 c. finely chopped celery
1 tbsp. olive oil
Dash salt
1/2 c. finely chopped unpeeled cucumber
1/4 c. finely chopped onion
1/4 c. diced pimiento
1 tbsp. wine vinegar
1/4 tsp. pepper

Combine all ingredients, stirring well; cover and shill at least 3 hours. Stir before serving. Can be made the day before.
