THREE - CHEESE BRUNCH 
9 eggs, beaten
1 1/2 tsp. sugar
1 1/2 tsp. salt
1/8 tsp. ground red pepper
3 (8 oz.) pkgs. Monterey Jack cheese, cubed
18 oz. cream cheese, cubed
1 (12 oz.) carton sm. curd cottage cheese
1 tbsp. butter, cut in sm. pieces
3/4 c. all-purpose flour
1 1/2 tsp. baking powder
1 (4 oz.) can chopped green chilies, drained (opt.)

1. Combine eggs, sugar, salt and pepper in a medium bowl; stir well.

2. Combine cheeses in a large bowl, stirring well. Stir butter into cheese mixture.

3. Combine flour and baking powder in a small bowl; stir well. Add flour and egg mixtures to cheese mixture, stirring gently. Stir in green chilies, if desired.

4. Pour egg mixture into a greased 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 45 to 50 minutes or until set. Let stand 5 to 10 minutes before serving. 15 to 18 servings.
