BANANA BREAD | |
2 c. smashed, very ripe bananas* 2 tsp. vanilla 1/3 c. butter 2/3 c. sugar 2 eggs 1 3/4 c. flour 1 tsp. baking soda 1 tsp. cream of tartar 1/2 tsp. salt *If banana skins are not black, peel and smash yellow bananas and leave on counter at room temperature for 1 - 2 hours. Set bananas aside. They will be added in at the end of recipe. Mix together vanilla, butter and sugar. Add eggs. In a separate bowl combine flour, soda, cream of tartar and salt. Thoroughly combine egg mixture with flour mixture. Add bananas. Pour into greased loaf or cake pan or muffin tin. Bake 15 minutes at 300°F. Change temperature to 325°F and bake for approx. 25 minutes. Cooking time will vary depending on size of pan used. Toothpick should come out clean from center when bread is baked thoroughly. |
