AUNTIE LIZ'S STUFFED MUSHROOMS 
1 lb. good size fresh mushrooms
1/2 med. onion, finely chopped
1/2 pkg. chopped frozen spinach
1-1 1/4 c. plain bread crumbs
1 stick butter
Grated Parmesan cheese
Pepper to taste

Clean mushrooms and remove stems. Chop stems and saute with chopped onion and spinach in 1 stick melted butter, until tender. Then add 1-1 1/4 cups bread crumbs and 2 tablespoons (more if desired) grated Parmesan cheese and pepper to taste.

Fill mushroom caps, sprinkle with Parmesan cheese and bake at 400 degrees for approximately 20 minutes.
