GINNY'S CRANBERRY ORANGE CAKE | |
2 1/4 c. flour 1 c. sugar 1/4 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1 c. chopped English walnuts 1 c. chopped dates 1 c. cranberries (cut each in half) Grated rind of 2 oranges 1 c. buttermilk 3/4 c. salad oil 2 eggs Mix dry ingredients together then add eggs, oil and buttermilk. Mix well. Bake 1 hour at 350 degrees in a greased and floured tube pan. Remove from pan and pour over until absorbed 1 cup orange juice mixed with 1 cup sugar. Cool. Wrap in foil and refrigerate for 24 hours before serving. Serve with whipped cream and a cherry. |
