REAL SOUTH OF THE BORDER (CANADIAN) CHILI | |
2 lbs. hamburger 6 cloves garlic 4 tbsp. minced onions 2 tbsp. chili powder 2 tsp. white pepper 2 tsp. salt 2 tsp. cocoa 2 tsp. sugar 2 tsp. cumin 2 tbsp. paprika 2 tbsp. flour 4 tbsp. cornmeal 2 (15 oz.) cans pinto or kidney beans 2 (16 oz.) cans tomato sauce 4 (16 oz.) cans water Cook hamburger until grey, not brown. Add all ingredients into large pot except flour, cornmeal and beans. Simmer bubbling at least 45 minutes (the longer the better). More water if necessary. Add beans, simmer 15 to 20 minutes longer. Add flour and cornmeal, and more water if necessary to reach desired thickness. Makes 6 to 8 bowls. Even better the next day after reheating. |
