RUSSIAN COFFEE CAKE 
1 c. sugar
4 eggs
1 c. vegetable oil
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
Pie filling

SUGAR MIXTURE:

1/2 c. sugar
1 tsp. cinnamon

Cream sugar, eggs and oil. Then mix in vanilla. Beat well. Add flour and baking powder. Grease sides of 9"x13" pan. Put half of mixture on bottom. Then sprinkle half of sugar mixture on this. Next add 1 can of pie filling. Follow this with rest of cake mixture and rest of sugar mixture. Bake 50 minutes at 325 degrees.
