ASPARAGUS WILD RICE SALAD 
In a medium saucepan, combine 2 1/3 cups water and the contents of a package (6 ounce) UNCLE BEN'S® Original Long Grain & Wild Rice and the seasoning packet. Bring to a boil. Cover and simmer 20 minutes. Stir in 1/2 pound asparagus, cut into 1 inch pieces. Cover and continue to simmer until all the liquid is absorbed, about 5 minutes. Transfer to bowl. Cover and chill.

Combine: 1/4 cup vegetable oil and 3 tablespoons white wine vinegar. Stir into rice mixture. Add 1 small green pepper cut into 1/2 inch pieces. Mix well and chill, preferably overnight. Garnish with red onion rings and serve on spinach leaves.
