2 c. chopped apples
1 c. sugar
1/2 c. vegetable oil
1 egg
1 1/2 c. flour
1/2 tsp. cinnamon
1/2 tsp. vanilla
1 tsp. baking soda
1/2 tsp. baking powder
1 c. nuts

Mix sugar and oil; add egg and mix well. Add flour, soda, baking powder, and cinnamon. Add apples, nuts, and vanilla. This will be a very heavy mix. Spread into a 9 x 13 inch greased pan. Bake at 350 degrees for 35 minutes. May be doubled and put in a jelly roll pan.
