FRESH APPLE COFFEE CAKE 
1 c. sugar
1 1/2 c. flour
1/4 tsp. salt
6 tbsp. butter
1 tsp. baking soda
1 egg, beaten
1 tsp. vanilla
2 c. chopped apples
1/4 c. brown sugar
1 tsp. cinnamon

Cream sugar and 1/4 cup butter (4 tablespoons) well. Add egg into square baking pan. Top with mixture of 2 tablespoons butter, brown sugar and cinnamon. Bake at 350 degrees for 30 to 35 minutes.
