SPAGHETTI OMELET 
3 c. leftover spaghetti with sauce
4 eggs, lightly beaten with fork
Salt and pepper
1 tbsp. minced parsley
2 tbsp. grated Parmesan cheese
2 tbsp. olive oil

Cut up spaghetti, add eggs, salt, pepper, parsley and cheese and mix well. Heat oil in frying pan, pour in spaghetti mixture and cook slowly but thoroughly on both sides. Cook about 15 minutes on each side. Serves 4.
