HONEY COOKIES 
1 c. honey
1 c. shortening
1 c. sugar
2 well-beaten eggs
1 lg. tsp. baking soda in a little hot water (about 1 tbsp.)
1/4 tsp. salt
5 c. flour to make soft dough
1 tsp. vanilla

Melt honey and shortening together and add the remaining ingredients and chill well. Roll out, cut with cookie cutters and bake until golden brown at 350 degrees for approximately 10 minutes. The cookies should "ripen" in a tight container for several days for the best flavor. We make these at Christmas but they are good anytime. Makes 5-6 dozen.
