ALMOND SHORTBREAD BARS | |
1 c. flour 1/2 c. icing sugar (powdered) 1 pinch of salt 3/4 c. butter 1/2 c. brown sugar, packed 1 tbsp. water 1 tsp. lemon juice 3/4 c. sliced almonds 1/2 tsp. almond extract Combine flour, icing sugar and salt in large bowl. Cut in 1/2 cup of the butter until crumbly. With floured hands, pat into ungreased 9 inch pan. Bake at 350 degrees for 12 to 15 minutes until lightly colored. Melt remaining 1/4 cup of butter in pan. Stir in brown sugar, water and lemon juice. Bring to boil and cook 1 to 2 minutes. Do not overcook or topping will be too hard. Remove from heat, stir in almonds and almond extract. Spread over base and bake 12 to 15 minutes, or until golden brown. Let cool a little while, then cut into squares. Do not remove squares from pan until completely cooled. These freeze great too. |
