GARDEN RELISH 
1/2 cauliflower head broken into flowerets
2 carrots, cut into 2 inch strips
2 stalks celery, cut into pieces
1 green pepper, cut in bite size pieces
1 jar (4 oz.) pimento drained
1 ja (3 oz.) green olives, pitted, drained

Other veggies can be used-broccoli, snow peas, mushrooms.

MARINADE:

3/4 c. vinegar
1/2 c. salad oil
2 tbsp. sugar
1 tsp. salt
1/2 tsp. dried oregano
1/2 tsp. pepper
1 tbsp. capers

Combine all ingredients in skillet with 1/4 cup water. Bring to a boil, then simmer covered for 5 minutes. Cool and refrigerate at least 24 hours. Drain and serve.
