OLD FASHIONED COFFEE CAKE
2 tbsp. butter (softened), divided
1 1/2 c. apples, peeled, chopped & divided
1 can (10 oz.) refrigerated flaky biscuits
1/3 c. brown sugar, firmly packed
1/4 tsp. ground cinnamon
1/3 c. light corn syrup
1 egg
1/2 c. pecan halves or pieces

GLAZE:

1/3 c. powdered sugar
1/4 tsp. vanilla extract
1-2 tbsp. milk

Oven 350 degrees. Generously grease bottom and sides of 9 inch round or 8 inch square cake pan with 1 tablespoon butter. Spread 1 cup of apples in pan. Separate dough in 10 biscuits. Cut each one into 4 equal pieces. Arrange pieces, point side up, over apples. Top with remaining 1/2 cup apples.

In small bowl, combine remaining 1 tablespoon butter, brown sugar, cinnamon, corn syrup and egg. Beat 2-3 minutes until sugar is partially dissolved. Stir in pecans. Spoon over biscuit pieces. Bake 35-45 minutes or until golden brown. Cool 5 minutes. Drizzle glaze over it. Serve warm or refrigerated. Serves 6-8.
