BOSTON BAKED BEANS (TOMATO SAUCE) | |
2 lbs. Smith's pea beans 1/2 tsp. baking soda 1/2 lb. fat salt pork, scalded 1 tsp. mustard 2 tsp. brown sugar Salt and pepper to taste 1/2 cupful tomato juice 2 tbsp. molasses 2 tbsp. onion, minced Wash beans thoroughly. Soak overnight in water to cover. Wash and parboil with the soda in boiling water until tender. Rinse, place in bean pot, mix in all seasonings and bury the pork at the bottom. Cover with boiling water, put on lid and cook very slowly for 6 hours. Renew water as needed (important). During the last two hours, draw the pork to the surface, score and let brown. |
