1 c. butter
2 c. sugar
4 eggs
2 1/2 c. cooked sweet potato, mashed
3 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. nutmeg

Cream butter with sugar until light and fluffy. Beat in eggs, 1 at a time, beating well after each addition. Add mashed potatoes, vanilla and spices. Blend well. Sift together flour, salt, baking powder and soda. Add to other mixture, blending well. Bake in tube pan at 325 degrees for 1 hour and 15 minutes.
