The firm persimmons - 'Fuyu', 'Maru' and 'Hyakume' - can be eaten out of hand as you eat an apple. When sliced crosswise into rounds, these fruits reveal an interesting and attractive pattern radiating from the center. Seeds can be removed or left in place to be discarded as the fruit is eaten. The slight crisp slices combine nicely with other fall fruits for salads and desserts. If you want to put some of these fruits away to use later, they can be frozen either whole or in slices. Freeze the whole persimmons when all green has disappeared from the skin and they have turned deep orange. Follow the direction for freezing whole soft persimmons.
