2 c. cooked mashed pumpkin
1 c. sugar
1/2 stick butter, softened
3 eggs, beaten
1/2 c. buttermilk
1 tbsp. vanilla
1 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. fresh lemon
1 deep-dish pie crust

Mix pumpkin, eggs, buttermilk, vanilla, lemon juice and butter. Add sugar and all spices. Mix well. Pour into pie shell. Bake at 350 degrees for 1 hour or until knife inserted comes out clean.
