CORNMEAL CREPES 
1/2 cup yellow cornmeal
1/2 cup boiling water
3 eggs
1/2 tsp. salt
1/2 cup sifted flour
2 tbsp. butter, melted
3/4 cup milk

Stir cornmeal into boiling water. Set aside for 5 minutes. Add eggs, salt, flour and butter. Add milk and stir. Stir occasionally while making. Heat a skillet with non-stick spray or butter; pour crepes onto heated pan and swirl batter around. Flip when tiny bubbles form, or if you plan to fill the crepes, bake the inside only.
