CUCUMBER SALAD 
4 cucumbers
1 tsp. salt
1 tbsp. vinegar
1 clove garlic, minced
1 tbsp. chopped dill
2 c. yogurt
3 tbsp. olive oil
1 tbsp. chopped mint leaves

Peel the cucumbers and cut in quarters lengthwise. Slice very fine. Place in a bowl and sprinkle with the salt. Mix together the vinegar, garlic, dill and yogurt. Pour over the cucumbers and mix well. Sprinkle the olive oil and chopped mint leaves on top of the salad. Serve cold, but do not refrigerate. Serves 6-8.
