BREAKFAST SAUSAGE 
1 lb. cooked sausage, drained (may use reg. or hot)
6 eggs, slightly beaten
2 c. milk
1 tsp. salt
1 tsp. dry mustard
2 slices day old bread crumbs
1 c. grated Cheddar cheese
3 tbsp. chopped onion
4 oz. chopped green onion
4 oz. chopped green chilies (optional)

Mix all ingredients and set overnight in 11 x 17 x 1 1/2 inch Pyrex dish. Bake at 350 degrees for 45 minutes. Serves 6.
