CHILI BEAN CASSEROLE 
3 c. cooked brown rice
30 oz. can chili beans
1 med. onion, chopped
8 oz. ricotta cheese, thinned with yogurt or milk until spreadable
16 oz. shredded Monterey Jack or Cheddar (reserve some for top)
Chopped black olives, onions, and parsley for a garnish

Mix together rice, beans and onion. In casserole, repeat layers of rice-bean mix, ricotta cheese and shredded Jack cheese. End with a layer of rice-bean mix. Bake at 350 degrees for 30 minutes. During last few minutes of baking, sprinkle reserved cheese over the top and garnish.
