CHOCOLATE SHEET CAKE | |
3/4 c. soft butter 1 1/2 c. sugar 1 1/2 tsp. vanilla 3 eggs 1/3 c. olive oil 2 1/2 c. flour 1/2 c. unsweetened cocoa 1 tsp. baking soda 1/4 tsp. salt 1/2 c. buttermilk 1/2 c. boiling water Cream butter, sugar until blended. Add vanilla. Add eggs, one at a time, beating until light and fluffy after each addition. Add olive oil. Mix flour, cocoa, baking soda and salt together. Add buttermilk to creamed mixture, beating until smooth. Stir in boiling water. Line bottom of greased 9x13 inch baking pan with waxed paper. Spread batter into pan. Bake at 350 degrees for 40 minutes or until toothpick inserted in center comes out clean. Let stand on rack 10 minutes. Take out of pan, peel off waxed paper. Set right side up. Cool thoroughly and frost with Mocha Frosting. MOCHA FROSTING: Beat in 2 cups powdered sugar until spreading consistency and smooth. If frosting is too thick, add a few drops of hot tap water or brewed coffee. |
