FABULOUS CARROT CAKE 
1 (20 oz.) can Dole crushed pineapple
1 c. butter, softened
1 c. brown sugar, packed
1 c. granulated sugar
4 eggs
1 lb. carrots, shredded
1 c. raisins
2 tsp. vanilla
3 c. flour
2 tsp. baking soda
1 tsp. each ground cinnamon and ginger 1 tsp. salt

Drain pineapple well. Cream butter and sugars until light and fluffy. Beat in eggs. Beat in pineapple, carrots, raisins, and vanilla. Combine remaining ingredients. Gradually beat into pineapple mixture until well blended. Pour into greased and floured 13 x 9 inch baking pan. Bake in 350 degree oven for 50-60 minutes until inserted toothpick comes out clean. Cool completely. Spread with Silky Frosting.

SILKY FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
1 tbsp. lemon juice
1 tsp. grated lemon peel
1 1/2 c. sifted powdered sugar

Cream first 4 ingredients until light and fluffy. Gradually beat in sugar until smooth.
