FRESH PEACH FOLD-OVERS | |
1 c. dark corn syrup 1/2 c. water 1/4 c. lemon juice 1 tsp. grated lemon peel 2 tbsp. butter 2 c. flour 2 tsp. baking powder 1/2 tsp. salt 1/2 c. butter 3/4 c. milk 2 1/2 c. fresh peaches, sliced 1/2 c. sugar 1/2 tsp. cinnamon 1/4 tsp. nutmeg In saucepan, combine syrup, water, lemon juice and peel; simmer 10 minutes; add butter. Sift together flour, baking powder and salt. Cut in shortening; add milk; stir just until moist. Roll to 1/2" thickness and cut into 5" squares. Combine peaches, sugar and spices. Place 2 tablespoons of peach mix on square; fold corners to center and pinch. Arrange in greased 8"x12" baking pan. Pour syrup over top and bake at 425 degrees for 10 minutes; reduce heat to 350 degrees and bake 30 minutes longer. Serve warm. |
