ZUCCHINI WALNUT BREAD 
4 eggs
2 c. sugar
1 c. oil
3 1/2 c. unsifted plain flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. vanilla
1 tbsp. cinnamon
3/4 tsp. baking powder
1 c. walnuts
2 c. grated zucchini, unpeeled
1 c. raisins (optional)

Beat eggs, gradually beat in sugar. Add oil. Combine dry ingredients and add to mixture alternately with zucchini. Stir in raisins, walnuts and vanilla. Put in 2 greased and floured loaf pans. Bake at 350 degrees for 55 minutes or tests done. Let stand in pans 10 minutes. Cool.

OPTIONAL: Glaze with powdered sugar mixed with little butter, milk, and vanilla flavoring. This freezes well.
