GARLICY GREEN BEANS | |
1 lb. green beans, trimmed 1 sm. (1/3 c.) onion, chopped 2 tsp. (2 lg. cloves) minced garlic 2 tsp. oil 1 tbsp. flour 1 tsp. paprika 1 (16 oz.) can whole tomatoes, drained (save liquid) & coarsely chopped Steam green beans for 5 minutes, then chill quickly under cold water, set them aside. In a medium saucepan, saute the onion and garlic in the oil for about 3 minutes. Stir in flour and paprika. Cook the mixture for 1 minute and then stir in liquid from tomatoes. Cook mixture, stirring it, until it is slightly thickened. Add the tomatoes and green beans, mixing the ingredients well. Cook the mixture, stirring it, over a medium heat for about 2 minutes or until it is heated through and the beans are tender-crisp. |
